Quinoa Garden Cakes with Lemony Yogurt

Yesterday at Whole Foods, I saw these pre-made quinoa cakes in the prepared food section that looked so yummy!  So I looked up the recipe and tried it out tonight.
I pretty much had all the ingredients besides the squash so I just doubled the grated carrot and added some more spices to give them a kick!
 They turned out really crispy and yummy, and the yogurt topping was the perfect compliment.  Although they felt like they wouldn't stick together, after baking they stayed into solid patties.

Yeah! I'm so glad to see you post something here. These look really yummy, i need a new "cake" recipe, i bet these would freeze well too huh?

You can definitely freeze and heat back up in a toaster oven. The recipe makes 8 big patties, I cut it in half though.

These do look good. I need to figure out a binding replacement for the egg to make veggie patties. Yummy!
